Hi, Beardy, at 95kg I'm assuming that puts your kart weight around the 163 mark with fuel? which doesn't make you overly heavy, but at 6'2" you aren't exactly the average height of a driver...
your seat position sounds like it's about in the right spot, because of your height you could perhaps go back 10mm, but i wouldn't think further is required. with the imaf seats, set their position with the bottom parallel to the ground, and focus on the 75 (or whichever you choose) dimension, the 200 is less critical.
as you have such a high centre of gravity you could try lowering rear ride height or lowering seat height(just 2-3mm, as you don't want to bottom out). A harder axle, with shorter hubs may also assist.
If you are using bottom castor adjustors, setting them so the mark is rearward (more castor) may help with the initial lift, depending on where your problem is.
if you're having problem bogging down off the exit, going to 0 or perhaps even negative camber can sometimes help get the kart to 'free up'.
as you've tried multiple engines with persistent high temps, this would lead me to believe bogging on the exit is your problem (if the heat is related to your kart set-up, that is). be sure to try different carburettors, and check your exhaust isn't leaking/damaged/blocked also.
from personal clubman heavy experience, I was 5'11", 75kg, ran a short hard axle, 90mm hubs, seat at 80/220/23, minimum castor, +2mm camber each side, 17mm stubs, bearing hubs, mag wheels. 1385 rear track. and i regularly ran engines to 220degrees that my brother in clubman light, and father in clubman super heavy only ran to 170-200degrees with similar kart set ups, so it may be down to your driving style, if possible, get someone experienced to watch you on a few corners, you may not realise you're dragging the brake, getting on throttle too early, or some other issue that's helping your engines get those high numbers.
